Stir-fried Brussels Sprouts

Serves 4


15 – 20 fresh Brussels sprouts - Wash, remove base and cut in halves or leave whole.
4 shallots, chopped fine
2-3 fresh garlic cloves, chopped fine
½ to ¾ teaspoon of salt
4-5 teaspoons extra virgin olive oil


In a shallow sauce pan, heat extra virgin olive oil until slightly hot.

Stir fry the onions until golden brown

Add the Brussels sprouts, garlic and salt

Stir frequently, cover and cook for 3-4 mins

Optional: Garnish with 1-2 teaspoons of Parmesan cheese and drippings of balsamic concentrate.

This is excellent with an omelette for breakfast.
