This uncomplicated dish is a delightfully filling dish packed with protein and fiber. Serve as a side with a meal or as a snack. Makes 8, 1/2 cup servings


2 teaspoons olive oil
1 cup onion, chopped
1 cup carrots, chopped
1 teaspoon garlic, minced
2 cans cannellini beans, 16 oz each
1/2 teaspoon each dried sage, rosemary, thyme
1.5 tablespoon lemon juice
1.5 cup vegetable stock
3/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons Parmesan cheese

  1. In a large pan, sauté onions and carrots in oil until soft, about 5 minutes. Add garlic and sauté for 1 minute.
  2. Stir in beans, herbs, lemon juice, stock, salt and pepper. Simmer until stock is reduced by half, about 10- 15 minutes
  3. Stir in Parmesan cheese. Serve and enjoy.
